The late Walter Mathagu always produced coffees that were perfectly ripe and sweet. Even as weather patterns challenged, they never overcame him. Year after year, the crop is exquisite, proving again and again to be the Grand Cru of coffee. Walter's legacy continues through his family - his sons, Peter, Jason, and Patrick Mathagu now run this great farm.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eWalter was \u003cem\u003ethe\u003c\/em\u003e small farmer pioneer of quality coffee in Kenya and a consummate craftsman until his passing in 2021. He was an agricultural officer serving the government of Kenya for seventeen years before retiring in 1987. More than anyone, Walter put the Kirinyaga coffee region on the map. He raised small farmer awareness to what is possible and brought seekers of great specialty coffee in growing numbers to his area.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eTaking inspiration from their family, Mamuto means “father, mother, and children.” Walter and Abishag have six children: three boys and three girls. They named the farm by combining the first two letters of Mathagu (family name), Muthoni (his wife’s maiden name), and Toto (child in Swahili).\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003eWe continue to buy Mamuto’s entire crop. It grows beneath the slopes of the 17,000-foot Mt. Kenya. The soil is deep red-orange, set amongst a lush green and very gently undulating landscape. The coffee is processed at the farm right through drying. After drying, it remains in parchment for approximately six weeks, resting in aerated bins before being transported for final milling and packaging. \u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003eKenya developed the most stringent processing and milling standards in the world. \u003cmeta charset=\"utf-8\"\u003eMamuto is machine sorted, then hand sorted to remove any remaining blemishes. Beans are sorted into very narrow ranges of size in order to maintain even roasting. The top grade, AA, is comprised of the two largest sizes, followed by grade AB, the next two sizes. \u003cbr\u003e\u003cbr\u003eTo experience Mamuto, roasted and brewed properly, is to drink coffee in every way comparable to the finest red wines. \u003cmeta charset=\"utf-8\"\u003eIt's well-balanced with lively dark fruit notes that fully reflect the terroir. Farms around the world have tried to replicate it, but so far, none have come close to producing the lush flavors Kenya is capable of. \u003cbr\u003e\u003cbr\u003eGeorge and Jenny travel annually to visit the farm and the Mathagu family around harvest season in late December. It's one of our most cherished relationships. Over the years, we’ve collaborated with Mamuto on adding drying beds, conditioning bins, and a storage building as well as introducing moisture meters all for the sake of refining their process to push quality forward. Most recently, we’ve embarked on a DNA project of Mamuto’s coffee beans. Our goal is to help preserve one of the most special and elusive flavors in coffee and become a source of learning for others along the way. This is a pure coffee with a light orange accent.\u003c\/p\u003e\n\u003cp\u003eMontecarlos Estate is owned and run by Carlos Batres and his wife, Julie. The couple were both educated in the US and have lived in metropolitan areas like D.C. and New York, as well as London, where Batres represented El Salvador at the International Coffee Organization before moving back to El Salvador. The farm has been handed down to family members for five generations, and in the mid-1980s, Batres inherited a slice of the land and has continued to expand it over the years, acquiring more land from neighbors (mostly relatives). He has now accrued at least 40 years working within the coffee industry.\u003c\/p\u003e\n\u003cp\u003eMontecarlos became the first estate in the world to grow and develop the Pacamara variety of coffee. Batres purchased most of the material El Salvador’s National Coffee Laboratory had been working on to cross the Pacas and Maragogype varieties. Between the years of 1987-1990 it was planted and developed at Montecarlos Estate, with the first commercial crop harvested between the years 1992 and 1993. Other varieties that each make up roughly 25% of the land are Catuaí, Caturra, and Bourbon (which we purchase annually).\u003c\/p\u003e\n\u003cp\u003ePacamara grew popular after being acquired by Starbucks in 2004 and labeled as Montecarlos “Black Apron Exclusive,” and in the same year, was highlighted at the El Salvador Cup of Excellence for its quality. Batres is rightfully proud of being a major player in pioneering Pacamara coffee, and it continues to be a prominent part of the farm’s offerings. He continues to share it with other coffee farmers in El Salvador.\u003c\/p\u003e\n\u003cp\u003eEl Salvador has a clear-cut dry season followed by a rainy one (May through October), ideal for evenly ripening coffee, which at the higher elevations occurs in February.\u003c\/p\u003e\n\u003cp\u003eCoffee is only harvested each season when perfectly ripe, which means that it may take several passes before the cherries are plucked to ensure the best flavor in the resulting cup. Once harvested, the cherries are milled and washed three times from the natural mineral water springing from the farm.\u003c\/p\u003e\n\u003cp\u003eThe Montecarlos Mill has been in use for five generations, featuring the original architecture that has been in the family since the 1870s. Coffee is 100% sun-dried on clay patios which allow the beans to dry in fifteen days—keeping temperatures cool in the daytime and retaining warmth at night. The channel system of the Mill is also unique in that it uses gravity to carry the beans upon being washed to any of its 60 drying patios.\u003c\/p\u003e\n\u003cp\u003eBeyond coffee, The Montecarlos Estate does much to help its society. The farm employs 250 full-time employees and an additional 250 part-time, paying above minimum wage. The farm also supports a school, church, and the use of roads that make transportation easier between towns. Sandy and Pillo represent a new generation of producers in southern Huila. While rooted in family traditions, they are boldly carving out their own path with vision and intention. Their farm is a world of its own, a living ecosystem where alongside coffee they grow plantains, yucca, and sugarcane, raise cattle, and are raising their three children on the very same land.
